New York food culture has always thrived at the intersection of creativity and pride. It’s arguably the city of food remixes where flavors travel through generations, neighborhoods, and cultures until they become unmistakably New York.

That spirit came to life at Greenpoint Fish & Lobster during a one-day pop-up curated by Chef Sibnavus, with a salmon chopped cheese featuring Pikliz Please as the unmistakable star of the menu. 

Born in bodegas and beloved for its simplicity, the chopped cheese isn’t just a sandwich—it’s a cultural staple. Traditionally made with ground beef, onions, and melty cheese on a roll, it’s the kind of comfort food that always hits, whether it’s after a late night out or a long afternoon racking up 10K steps sightseeing and running errands. The salmon variation was made popular by TikTok influencer, Keith Lee, who learned quickly that New Yorkers have strong opinions about quintessential New York items. 

But what makes New York food special isn’t purity. It’s exchange. The chopped cheese itself is a product of migration and adaptation. 

Chef Sibnavus understood that assignment and added to his rendition ingredients that immediately elevate the sandwich, including: roasted tomato aioli, smoked gouda, bright capers, and spicy Pikliz Please to cut through the richness. 

This collaboration is a point of pride for us as a New York–based brand sourcing New York produce, including cabbage, our cornerstone ingredient. A Brooklyn fishmonger, a local chef, and a condiment rooted in Caribbean tradition but shaped by this city—proof that New York food thrives when tradition stays open, alive, and shared.
